Best way to store an open bottle? Pour remaining wine into a clean half-bottle (375ml) nearly to the top and insert a cork to touch the surface of the wine.
2nd best way to store an open bottle? Spray nitrogen (Vineyard Fresh is a trademarked product) into the open bottle and re-cork.
3rd best way to store an open bottle? Use the Vacu-Vin (trademarked product)  to remove much of the oxygen from the bottle.
How to chill a wine quickly? Immerse bottle in an ice-water bath (50/50 solution) for 20 minutes.
